2005 Pinot Noir
Made from organically grown grapes, the 2005 vintage was hand picked in the early morning of September 12 at a Brix of 24.5 and a pH of 3.36. Total acids were 7.62 g/L. A three-day cold soak followed and starting on the fourth day the must was inoculated with Assmanshaussen yeast. Punched down by hand twice daily, fermentation was complete in 14 days. On September 26th, the wine was basket pressed into French oak barrels, without settling. Malo-lactic fermentation started in barrel, and finished in mid-December. The wine was racked off the gross lees at the New Year, and again as the 2006 winter solstice approached. Aged in barrel a total of 18 months, and bottled unfiltered and unfined on April 5, 2007.
